Slow-Cooked Cracked Wheat and Meat Porridge is a traditional celebratory dish commonly prepared for weddings, holidays, and special gatherings. It is made by slowly cooking cracked wheat and meat together until they form a rich, creamy, porridge-like consistency.


Ingredients

For the Porridge:

  • 2 cups cracked wheat

  • 500 g bone-in beef or chicken

  • 8 cups water

  • 1 teaspoon salt

  • 2 tablespoons butter

  • 1 teaspoon red pepper flakes

  • 1 teaspoon ground red pepper


Instructions

  • Rinse the cracked wheat thoroughly and soak it in water overnight.

  • Reduce the heat to low and simmer for 3–4 hours, stirring occasionally, until the wheat is completely tender.

  • Remove the meat from the bones, shred it, and return it to the pot.

  • Using a wooden spoon or pestle, vigorously mash and stir the mixture until it reaches a smooth, thick, paste-like texture.

  • To prepare the topping, melt the butter in a small pan and stir in the red pepper flakes and ground red pepper.

  • Drizzle the spiced butter over the porridge and serve hot.
