Add the spices, mix well, then stir in the walnuts if using. Remove from heat and let the filling cool.

For the outer shell, soak the cracked wheat and semolina with hot water and let rest for 10 minutes.

Add the red pepper paste, salt, and spices, then start kneading.
-
Add the flour and egg and knead thoroughly. Adjust the consistency with water if needed.
-
Take walnut-sized portions of dough and roll them into balls in your palm.
-
Press your finger into the center to form a cavity, add some filling, and carefully seal the dumpling.
-
Prepare all dumplings in the same way.
For Frying:
-
Heat vegetable oil in a deep pot and fry the dumplings until golden brown.
For Boiling:
-
Bring a pot of salted water to a boil, add the dumplings, and cook until they float to the surface.
Serving Suggestions
Serve the stuffed bulgur dumplings hot with lemon wedges. They pair very well with yogurt or a yogurt-based drink. Fried dumplings offer a crispy texture, while boiled ones are softer and more delicate.
