Revani Recipe
Revani is one of the most beloved syrup-soaked desserts that has come down from Ottoman cuisine to the present day. Thanks to its semolina-based structure, this dessert has a wonderfully soft texture, and with its lightness and flavor, it is preferred in many settings—from tea times to special gatherings.

Ingredients
For the Cake:

3 eggs

1 cup granulated sugar

1 cup yogurt
-
1 cup semolina
-
1 cup flour
-
1 tea glass vegetable oil

1 packet baking powder
-
1 packet vanilla
For the Syrup:

2½ cups granulated sugar
-
3 cups water
-
Juice of half a lemon
For the Topping:

Desiccated coconut
-
Ground pistachios
-
Walnuts or hazelnuts (optional)
How to Make Revani

First, prepare the syrup. Bring the sugar and water to a boil in a saucepan.

Once it starts boiling, add the lemon juice and boil for another 5 minutes. Remove from heat and let it cool.

In a deep bowl, whisk the eggs and sugar until light and foamy.

Add the yogurt and vegetable oil and continue whisking.

Add the semolina, flour, baking powder, and vanilla, and mix well.

Pour the batter into a greased glass baking dish or baking pan.

Bake in a preheated 180°C (356°F) oven until golden on top, about 30–35 minutes.

Pour the cold syrup evenly over the hot cake as soon as it comes out of the oven.

Let it rest for at least 2 hours so the cake can absorb the syrup.

Garnish with desiccated coconut, ground pistachios, or walnuts and serve.
Serving Suggestions
You can slice and serve revani either cold or slightly warm. Serving it with ice cream or clotted cream will enhance its flavor even more.
