Ingredients
For the Dough:
- 4 cups flour
- 1 cup warm milk

- 2 tablespoons olive oil
For the Filling:
- 300 grams ground beef
- 1 dry onion (finely chopped)
- 1 tomato (grated)
- 1 green pepper (finely chopped)
- 1 tablespoon tomato paste
- 2 tablespoons vegetable oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes
- ½ tea glass water (to soften the filling)
For the Topping:
- 1 egg yolk (for the edges)
- 1 tablespoon butter (to brush after baking)
How to Make Minced Meat Pide?
Preparing the Dough:
- Sift the flour into a large bowl and make a well in the center.
- Add the yeast, sugar, and warm milk to the well and let it sit for 5 minutes.
- Add the salt and olive oil, then start kneading.
- Gradually add the warm water and knead until you have a soft, non-sticky dough.
- Cover the dough and let it rise for about 1 hour.
Preparing the Filling:
- Place the ground beef in a bowl.
- Add the chopped onion, pepper, grated tomato, and tomato paste.
- Add the vegetable oil and spices, then mix well.
- Add ½ tea glass of water to adjust the consistency of the filling.
Shaping and Baking the Pide:
- Divide the risen dough into 4 equal pieces.
- Roll out each piece lengthwise into a thin pide shape.
- Spread the minced meat filling evenly down the center of each pide.
- Fold the edges inward to form the classic pide shape.
- Brush the edges with egg yolk for a shiny finish.
- Bake in a preheated oven at 220°C (428°F) until golden, about 15-20 minutes.
- Brush the edges of the freshly baked pides with butter for extra flavor.
