  • A large bowl filled with cold water


How to Make Boiled Layered Cheese Pastry

  • Sift the flour into a large bowl, make a well in the center, and crack in the eggs.

  • Add the salt and water, then knead until you obtain a firm dough.

  • Let the dough rest for 10 minutes, then divide it into 10 equal portions.

  • Roll each portion out into very thin sheets.

  • Bring a large pot of water to a boil and add salt.

  • Boil the dough sheets one at a time for 20–30 seconds.

  • Transfer the boiled sheets immediately into cold water to stop the cooking, then drain well.

  • Grease a baking tray with butter and place the first dough sheet in the tray (this sheet should not be boiled).

  • Layer the remaining sheets one by one, brushing melted butter between each layer.

  • After the fifth layer, spread the cheese and parsley filling evenly, then continue layering the remaining sheets with butter.

  • Place the final sheet on top without boiling it and drizzle melted butter over the surface.

  • Bake in a preheated 180°C (356°F) oven for 40–45 minutes, until golden brown.
