For Boiling the Dough Sheets:

1.5 liters water

A large pot of boiling water

How to Make Boiled Layered Cheese Pastry

Sift the flour into a large bowl, make a well in the center, and crack in the eggs.

Add the salt and water, then knead until you obtain a firm dough.

Let the dough rest for 10 minutes, then divide it into 10 equal portions.

Roll each portion out into very thin sheets.

Bring a large pot of water to a boil and add salt.

Boil the dough sheets one at a time for 20–30 seconds.

Transfer the boiled sheets immediately into cold water to stop the cooking, then drain well.

Grease a baking tray with butter and place the first dough sheet in the tray (this sheet should not be boiled).

Layer the remaining sheets one by one, brushing melted butter between each layer.
